Cheesy Tator Soup


admittedly, I am no Pioneer Woman
but this recipe for Potato Soup is the bomb!
what recipe with cheese and tators could be bad?
those hoot owls are my salt & pepper shakers...
arent they so cute?

in the age of pre-packaged, pre-washed and ready to eat
does anyone actually peel carrots anymore?
as a child, I remember peeling tators & carrots
and rather enjoying it! 
Moms- make your children peel carrots!
it builds character.

 Milk, Velveeta & Cream of Chicken
I never said this was a low fat recipe...
in fact, I recommend using at least 2% milk and extra cheese
makes for seriously creamy goodness

so yummy for the tummy!

Potato Cheese Soup
3 cups diced raw potato
1 1/2 cup water
3/4 cup diced celery
3/4 cup carrot
1 T minced onion  ( I prefer to use fresh, chopped onion)
1 t parsley flakes
salt & pepper
1 can cream of chicken soup
2 cups milk
1/2 lb velvetta cheese, cubed
Combine potato, water, celery, carrots, onion, parsley flakes, salt and pepper in a large kettle.  Cook until all veggies are tender.  Over low heat, stir in the chicken soup, milk and cheese.  Heat on med/low and stir frequently until the cheese melts.
Be careful not to use high heat at this step, you do not want the milk to curdle or the cheese to burn to the bottom of your kettle.  Be patient...it is so worth it!  :)
